    I had made New England Clam chowder last week, today something a bit different. I had gotten some lamb for stew at a special price, so I'm going to try my Guinness Beef stew recipe with the lamb. The wifey won't care for eating lamb. We normally only eat what we raise and grow here on the farm. Hey she's away and I'm going to keep myself busy.

    damm !! Is that a pic of what you made or from the recipe? Either way, it looks delicious.

    I dont think i could feel good about eating lamb that wasnt locally or at least humanely raised either. But that does look really good :drool:

    That's most likely what they are down here we get Dry Creek or one of the other Biomaxx products and some times Cheat Rivers .

    That's a pic from a recipe. We agree with you about the animal husbandry, and being an organic farm we march to a different beat than most.

    We have but two USDA inspected butcher plants up here. There is plenty of demand for more alternatives. ;) We were suppose to have a mobile poultry processing trailer. They got USDA grant monies to pay for it. It gets outright shady from there on. I was processing hundreds of birds here while we waited for them to sort this mess out. You can process a thousand per adult living on your property without being inspected. I stopped raising them for others when it became apparent that this processing trailer was bound to stay on someone's property.:mad:

    Snow has stopped, all the initial cooking of tomato paste/crushed/garlic/seasonings and meats are done and the gravy is simmering.

    Time to get outside and clean up :shiver: before the Pats game :thumbs:
