    Last ML I made had panko crumbs, and no milk of any kind. Oh, I guess I did put in a little oatmeal too.
    Just started throwin' stuff into the bowl that sounded gooder. I don't measure when making ML, I dump.:D
    They came out great. Now......if I can just remember what I put in there.

    You can make buttermilk with regular milk and vinegar

    I saw the buttermilk and oatmeal in some other recipes and decide to throw them into the meat mix. Turned out really good.

    Add heat, scrape out the curds and use the whey in place of buttermilk. Enjoy the fresh ricotta you just made.

    This is the first time for my own Ground Deer. I did not know how much fat the processor added. But I called them today and found out that they add 10% beef tallow. So the buttermilk and oatmeal might not be needed, but it turned out so good I might just keep those in the recipe.

    We throw in a pork butt and grind it all together, it works great...

    MACHRIA's Wood Fired FIRE Kraut and Dogs

    2 - Large packages of sauerkraut
    1 - 12 oz dark beer (A Stout is best)
    1 package of onion soup mix
    2 Large Vidalia onions, chopped
    1 or 2 Jalapeno Peppers chopped
    15 or 20 Natural casing Hot dogs
    Hot dog rolls
    (1 can of tomato paste can also be tasty and make it redish brown)


    Put all ingredients in a big pot except for the Hot Dogs, cook on a hot stove for 1 or 2 hours or longer (you can't cook it too long!). About 15 minutes before meal time, add in the hot dogs and let cook for another 15 or 20 minutes. Serve hot dogs on a bun, with a generous amount of the Kraut mixture.

    MACHRIA Steamed Jalapeno Clams

    Ingredients:
    1 or 2 dozen Little Neck Long Island Clams
    2 to 4 cups of of chopped celery (you can't have too much celery in this!)
    10 or 20 cloves of garlic, chopped (you can't have too much Garlic in this!)
    3 or 4 FRESH Jalapeno peppers, chopped
    A couple sprigs of fresh diced parsley
    Sprinkle of Oregano
    1/2 cup of Olive Oil
    1 or 2 sticks of Butter
    Old Bay Spice (or similar fish spice mix[Celery salt, Coriander, Curry powder, Cumin, black pepper])
    1 DARK beer (a Stout works best)
    1 loaf Italian or French bread
    A glass or two (or 3!) of your favorite Bloody Mary (garnish with a shrimp!)

    Instructions:
    Place all ingredients in a large sauce pot and bring to boil. Lower heat and let simmer 5 or 10 minutes. Ladle out some clams and broth into a large serving bowl and serve with a big hunk of fresh bread for dipping into the broth. Serve with a small seafood fork (for clams) as well as a soup spoon (for broth) and don't forget the accompanying Bloody Mary!!

    Yup a very nice refurb... It comes with a new battery ssd hard drive and now more extras. Highly rated seller too! :)

    I need it to start on a few projects including the cook book otherwise I am on a mac and linux desktops and I am away to much to be on desktops only.

    Yep, all my laptops now have SSD drives (except my wife's). Been using 'em for a few years, and they're quite a bit faster than platter drives.
