Delicious Dinner's a'cookin!

    Made a pretty epic dinner since I was home with Maple and Dawn worked today. This chicken at least is up there in my fine dining days as chef. I dredged the chicken in a heavily seasoned flour while the CI pan with evoo heated up. When the pan was smoking hot, I added the chicken until it was seared on both sides, and then finished in the oven.

    While the chicken was cooking, I deglazed the pan with some PBR (out of white wine) added some chicken stock, and let it reduce 75%. When it was reduced it simply needed some black pepper and a dab of butter to finish it up.

    While the chicken finished in the oven, I topped the baked potatoes with some bacon cheddar and scallions. Lastly, I seasoned some corn with salt, pepper, butter, and some grated parmesan cheese. Below is the finished product. Enjoy!

    Nice Dave...... just watched his blackened shrimp that will get topped on a pizza! Yup my kind of chef! fishingpol might want to make that one in his WFO!

    That looks excellent. Did you wet the chicken with anything before you dredged it?

    Mmmm, dredged chicken in flour. I was thinking you were making chicken Marsala at first. That looks real good.

    The shrimp pizaa was something else too. That pizza oven looks like a beaver style Quebec oven.

    It crossed my brain, but outta wine. I also enjoy pounding out some veal, dredging with flour, finishing it in the
    oven, making the sauce deglazing with white wine, and finally topping with some prosciutto, fresh mozzerella, and a fresh tomato slice!

    I had a frozen pizza at lunch. Those are damm good too!

    Uh, never met a frozen pizza that I liked! My family ran a pizza/sandwich store. Everything was made right there. They made their own dough, shredded their cheese. Bacon cooked their etc. Even our state's most notable horror story author would stop in.
    I've eaten plenty of frozen pizza, but I can only say they were OK because they are convenient.
    Now, that chicken looks darn good. Love pan fried chicken. :drool:

    a little lemon, shallot, garlic, capers and you got a fine piccata, over a bed of al dente penne, that's a $20-30 restaurant meal all day.
