    The prime cuts don't last long. Just finished cooking both tenderloins. The stuff that hangs around the longest is the burger meat. Usually all the prime cuts are gone within a month.

    I'll make osso bucco with the rear shanks, venison schnitzel with the rear leg cuts, etc.

    I ate the heart this afternoon for lunch. I never at heart before but it was really tasty. I did not like the liver.

    Nice doe I usually take two does here as they are trying to thin the numbers. That and I find the meat better and you can't eat horns.
