They had pork bellies at Costco today, $2.29. First time I ever saw them there. First time I've seen a big belly anywhere. My local guy will get them for me, but I would have to buy two at a time, and I'm not ready for that. I've seen smaller pieces at a grocery store, but they were almost $5/lb. Unfortunately, my garage is a gigantic disaster after moving. If I could access my freezer and had it running I would have bought one. Hopefully they will have one for me in a couple of weeks. Been wanting to try this.
I used this stuff, mostly because it was all I could find locally. It turned out pretty tasty. https://www.himtnjerky.com/Buckboard-Bacon-Cure.html I smoked it on my Weber gas grill. With a big pan of water, it was easy to maintain 210-225° with just the center burner going. Got up to 150° in a little less than two hours. A couple hickory chunks made the smoke. I used about a third of that belly as a trial run. The rest is in the freezer, and I just bought another this afternoon
