Any time works for me. I usually put butts on at 9 pm and let them go all night. Last time I put them on at noon and took them off at 11:00pm. Whatever it takes Haven't done brisket in some time. Man that looks good!!!
I don't have the setup for overnight smoking - cheap Kingsford charcoal grill. I did see some sweet "Green" Eggs yesterday - except they were Crimson Tide and Blue & Orange. Alabama and Auburn setups
My 1st post here and the only wood involved was green plum tree for the smoker box. We rotisserie chicken fairly often and I had been wondering how a prime rib on the rotisserie would work out. I will be doing this again!

yes these setups were 1200+ but lots of extras $90 Kingsford with $5 worth of charcoal and some white oak I processed last summer produced below

Smoke/grill just a formality - beautiful smoke cap on your brisket I go a bit heavy on the rub and mop regularly with constant smoke for atleast 8hrs (weather permitting) this one held at 146F for 3hrs before foiling and kicking the charcoal load up a bit. Figured being 98F out it would cook itself
