    Last night's leftover mushroom and sage risotto, a little piece of fresh mozzarella, egg wash then bread crumbs, into the fryer just long enough to crisp up the outside...yum

    Risotto rice cooked as a proper risotto, turns out more like rice porridge, the next day when cooled it will form balls pretty readily.
