    This http://pickyourown.org/allaboutcanning.htm is a pretty good resource and the basics are there. I don't always go crazy with all the spices, I do just bread and butter, dill pickles and relish. I make just 6 jars of dill relish for me as I'm the only one who likes it.
    Pickled beets, http://www.pickyourown.org/pickledbeets.htm I don't bother with any of those spices except the cloves if we have any ( usually buy them for ham and either have leftovers or forget about them ) nor the onions. I had a good cauliflower year two years ago and pickled some of those.

    Usually grow a little dill and basil every year
    planted garlic last Fall and they have a good 6 to 12 inch blanket of mulched leaves ( and snow !! ) to hopefully protect them from the ravishes of Winter.

    I make all my stuff per the pickyourown site like billb3 uses. I make dill pickles, hot canned peppers, and tomatoes. I've also made salsa, from scratch, and from a store bought spice pack and my own tomatoes. My scratch recipe was better:)

    Oh and billb3, we got a juicer for a wedding present from my brother and his wife. We love it, but some juice combos are better than others. Almost all fresh juice from a juicer has a lot of fiber, which has its own consequences.

    Agree with the pickyourown.org. I don't know where I got the recipe but I also like radish pickles. The way I make them is heat some vinegar and sugar than just pour over them. I keep them in the fridge and use fairly quick. I am sure you could find a recipe to can them too. Also like cubes in apple cider vinegar with onion. Better after a few days in the fridge.

    I don't need more fiber and fortunately I drink lots of water. My sister juices kale and adds other things so she doesn't taste the kale and swears it helps with not wearing so much bread and pasta and I'm wearing a bit of bread and pasta. All this snow and not bike riding and walking or working outside on the weekend is not helping.

    As I was laying in bed last night with my own last conscious thoughts, ( I know-scary) it came to me that it has been quite awhile since I've had pickled fish. And now this thread! Used to work in a factory where we would constantly have "feeds". Usually of the game assortment; a few of the guys would normally bring in pickled northern and sucker. Was always good! Gonna hafta go buy some pickled fish now.

    I'll have to do some digging but my grandma had an awesome pickled fish recipe, and I've got a few pickled eggs recipe... regular, hot, wholly cap my face is on fire hot. :D
