Wood fired oven. Mid-winter calzones.

    I dug out the oven today and uncovered it to make calzones. Everything was socked in with snow, the tools, maul, rooker and scraper. I located everything and took out some oak that was in the covered stacks. I fired a few small oak splits and found some maple under the snow that I had split at the last firing.

    Getting it going, and maple on deck at the door melting snow off.

    The first one was Italian sausage, sautéed mushroom and mozzarella cheese. The oven was a little hot, but it tasted fine.

    For dessert, I made a pecan pie. The pecans were my s.s. gift from basod. They were delicious! Thanks again. This pie smelled incredible hot out of the oven.

    Ha. You haven't had time to read it all.

    That guy has put a lot of effort into making pizzeria quality pies at home. I've really improved my results with some of his stuff.

    After I get into my next house, an oven like Jon's is first on my list of things to do. I'm envious every time he throws a pic up.

    It was maybe around 18" in this spot.

    Same as my pizza. I got this from my mother who picked it apart from some pizza making books over the years.

    1 cup of water 110 degrees
    1 teaspoon of yeast
    3 cups of bread flour
    1/2 tsp of salt.

    I usually let pecan pie cool off before eating but I ate it pretty hot. I did not have ice cream or whipped topping at the time.
