Anyway, a while back Scotty Overkill gave me his wing sauce recipe and ever since I have been tinkering with how to get it to meld with my own existing recipes. Well, here's the deal-- I make three types of wings (buffalo, honey smoked bbq, and Asian) and each have their own idiosyncrasies that took some time to prefect. After how last night's wings turned out, Scotty's sauce has removed my buffalo wings from the menu! Scotty asked me for full details, so here goes. In an old bread sack I mixed about 3/4 white flour and a few tbsp of corn meal. Seasoned with salt, basil, garlic granules and smoked paprika (if you don't have smoked, you can use Hugarian-- but if you have neither, just use pepper). This is a basic shake and bake, coat you wings and toss on a buttered 1/2 sheet pan. Bake at 425 (Gas mark 7) for 30 mins. Enter Scotty's sauce recipe-- not that I remember it exactly, so this is my version of it. 1/2 bottle of cayenne hot sauce, with a big squirt of siracha added. 1/2 stick of melted real butter. A squirt of liquid smoke. 1 tiny bear of wildflower honey from Pallet Pete -- probably about 1/4-1/3 cup in there. About a tbsp of sugar and then the magic ingredient-- 1 packet of ranch dip dry mix. Added a few cloves of minced garlic (the real stuff). When the wings come out of the over, toss them in the sauce and then right back into the oven for 15 more mins. Coat the wings again and toss them back on the pan, grouped as tightly together as possible. Dump any remaining sauce on top of the wing pile. I think grated some Asiago cheese directly onto the wings, covered with pickled garlic and cherry peppers and covered again with shredded co-Jack. Baked another 8 minutes and then let cool briefly. The wings were saucy, flavoured through and through, and probably the best I ever had![/COLOR]
Well I'll critique them here real soon....I may attempt them on New Years Eve! If not, I'll do them on Superbowl Sunday. They sound delicious! The recipe I gave you is one I've been using for several years and the whole family loves it, sounds like you 'one-upped" the ante here.. lol
We've got a place nearby that does 40 cent wings every Wednesday. They make some good teriyaki ones. Anyone ever tried to make that?

Trying my version of this tonight. Grocery had legs on sale for .49 per lb so I got them all! GF will not eat bone in so she gets breasts. Subbed agave nectar for the honey since it's what I had on hand. One question though. ..the packet...is it the dip one or the dressing one? I used the dressing. Results soon once it cools!
