    I have never seen that before.....I was with a guy tracking a deer he shot, once we found it I gutted it for him. He was insistent on me cutting out the butt hole, I always just made sure it was clean. I told him he can cut it out if he wanted it out, seemed to me you would possibly contaminate more meat do it. Things get passed down from generation before us I guess!

    Ya we do the same when tending to them on the ground SB. The one fella at the camp is a butcher and says its not a problem at all with the contamination? :) We do do the legal thing with the bucks 'who ha's' and it makes you wonder a bit.:yes:

    Looks good!! I've always cut out the butt hole too. The first couple times I nicked some parts I shouldn't have, and just rinsed the meat out with water real good. I never noticed a difference in taste.

    I always break through the pelvis and cut the Bhole out also since I was taught to do it that way. It is quick and easy to do once you get the hang of it. I then take mine and hose them out really well with lots of cold water.

    I've done that too, it is much easier. It really depends on if I have to drag the deer out of the woods, then I don't want the pelvis split as it'll get dirty with leaves and dirt. But if there's a 4 wheeler or truck where the deer can be carried I'll split it as long as the knife I've got with me is strong enough or there's a hatchet around.

    The hatchet is the best way to do it one good smack and it's over! My deer are usually out of the woods within 15 minutes of shooting them and are getting a ride back to the house in the front end loader. I usually bring them back and then gut them behind the wood piles so I don't have to worry about any contamination or dragging them. Yes I am spoiled lol

    I core out the butthole and pull it into the cavity carefully and right back out into the gut pile. Can't always cut the pelvis out, especially with the big mulies or elk. I've never seen the wind pipe cut out like that either but immediately knew what you had done. You still need to reach up into the chest to pull out the other organs but I suppose you avoid the blind cut. I've read instructions that fell you to core out the butthole pull it out, tie it off with string to keep turds in, and then pull the butthole back into the deer before rolling the whole mess out.

    This all applies to cows, pigs, etc.

    I tried the string thing once, but my bloody, cold, wet hands couldn't tie a knot tight enough, and the string disappeared when I pulled it through. I still have no idea where that string went, and I processed that deer all they way to freezer paper myself!

    This is the way I do the butt hole but I use 4" or 6" zip/cable ties. Unless I'm going to shoulder mount, I split the rib cage up to the neck to remove the wind pipe too. By splitting the rib cage it is much easier and cleaner to remove the vital organs and diaphragm. No need to be reaching blindly up into the cavity to the elbows with a razor sharp knife in your hand. My $0.02

    Always cut out the anus. Ream the inside of the pelvis from the rear and cut the small intestines just ahead of the pelvis in the main cavity. Force the contents of the intestines away from the cut position first, cut and then pull the whole thing through toward the tail. The bladder comes with it. If you are careful there is no contamination and there is a clear path for drainage after cleaning or hanging if you hang the deer by the horns. I have many times been complimented on the cleanliness of the gut work I do. A proud moment for sure.:smoke:
