I was out of sugar for my coffee this morning, and didn't feel like going to the store. So I used some of my homemade maple syrup instead! Can't even tell the difference! I've done this before, but I thought I'd share. I prefer it over using brown sugar.
I like it on ice cream! I think Sinngetreu had a thread on this too a while back. The old lady likes using our homemade hickory syrup.
Try this.....two big tablespoons of maple syrup in a tall glass of ice cold whole milk...... Yum........
Just pulled another gallon jug out of the basement to break down into smaller bottles......counting this one i still have 11 gallons of syrup from spring 2012 and spring 2013, never even made any last year but we're gonna try and make a lot of it this year. I'll be turning a gallon of it into maple sugar here later this month so the boss can use it in her famous maple sugar cookies and maple snickerdoodles.
I prefer maple syrup over brown sugar in my oatmeal or malt o meal. Sometimes don't even add cinnamon anymore.
Dang Scotty - you sure live up to your nickname! I made a little over a gallon last year, and gave about 1/2 of it away to family and neighbors. Could have probably made a lot more, but I put a ton of the sap on the ground - I just couldn't keep up when it really got flowing! Thinking about some type of storage tank this year. Might be able to get my hands on a couple free 55 gallon plastic drums from juice concentrate.
I'll dig up some pictures of my primitive operation.....trouble is I'm usually using my phone to post and the pics are on the laptop (my wife and daughter hijack the laptop I never get to use it!), I started out tapping around 30 trees, made 8 gallons that year. That was with a homemade trammel and kettle over an open fire. It was fun that way but very wasteful on fuel. Now I'm tapping over 100 taps, boiling around 1000+ gallons of sap in a season and ending up with 20-25 gallons of syrup using a homemade evaporator.... I use plastic 55 gallon vodka barrels for sap storage......only store it for a day or so because it'll spoil.
Shawn, I've done that too. I usually use a tsp. of honey, but changeout to homemade Maple syrple every once in a while. Gooder stuff.
