I wear Bugzeyes as any type of safety glasses here in middle Georgia are fogged over quickly. For hearing protection I either wear ear plugs or worktunes if I don't feel the need for a hard hat. +chaps of course...

I wonder if you put ear plugs in very slightly whether it would shield some of the noise, but allow you to still be aware.

The Promark is their top-of-the-line helmet, followed by the Forestry Helmet, and then the Woodcutter. Honestly, pick one that fits your budget. They will all do their jobs well, the hearing protection is better on the top two units vs the Woodcutter unit.

I still wear ear plugs falling. The hard hat catches a lot of the noise and helps direct it to my ears. It may be where it's a tin hat.

I usually try to maintain body contact with the tree, IE lean into it with a shoulder. I find that I can feel any shifting or if branches up above start breaking off. It works for me. Keep in mind I am not a professional faller, this is probably not the proper way to do it, and I don't know my own azz from a hole in the ground...

Look up is the best way to watch for that stuff. After a while you'll be comfortable not watching the saw and watching the tree top and stuff.
