    Actually prefer to smoke when it is on the coolish side…..but not 17*…..down here that’s downright COLD:rofl: :lol:

    Do you have "blanket" to prevent heat loss? One of my smoker wood customers showed me his set up and has one. Something I never knew existed.

    Looking tasty there Kevin. What wood you using? I added beech to my selling menu this year.

    im using my pellet smoker…. I use to buy into the blanket theory. But any more I just let it go. It might eat a few more pellets, but it’s running just fine at this temperature. The newer PID systems, do a lot better than the older analog systems.


    Pellets are a fruit wood combo. I prefer a lighter smoke flavor. I like my meat to speak a bit in the profile.

    Very much agree! I like the smoke to add to the flavors, not overpower them!:handshake: So many heavy smokes tend to have the slightest hint of creosote in them!

    Reminds me of my hickory smokes! :emb: I like the heavy smoke flavor.

    I cleaned my friends chimney during the week and the creosote smell reminded me of sausage! :loco: :crazy:
