    Hope ya'll have a TREMENDOUS THURSDAY. 42⁰/53⁰ fair and breezy. Another good night at work, got to deliver 2 totes of oak this morning, then nap, might stack the Bradford pear that was split the other day.

    Hey brother, those are INSTANT grits, they de debbil...real Southerners don't claim those...also got INSTANT oatmeal on the trailer too.
    But when you don't have much, anything helps.

    Kudos for all your hard work!

    Being born in NH, our comparable breakfast item to grits was cream of wheat; and I didn't even know about grits until I went in the Corps. Fast forward over forty years, and the two southern dishes I still have at least a couple times a month are biscuits & gravy (the bomb) and grits. I know any true southerner would turn their nose up at the instant grits, but I always keep some in the larder for a quick hot breakfast. Friends around here (true New Englanders, not transplants) don't understand how I can eat grits, but after eating countless bowls of the stuff in the south, I think grits are great (I keep it simple with just a bit of butter (not margarine) and a dash of salt).

    Yes sir, that's the way we cook them, 4 cups of water, 1 tsp salt, about 3 tbls of butter :thumbs::thumbs: into the water, bring to a boil, stir in 1 heaping cup of quick grits, :stirpot::stirpot::stirpot:...cook awhile then add a big handful of sharp cheddar cheese....
    Another variation is to add a can of chopped green chillies...

    Sausage gravy and biscuits is completely different than the old SOS (which is also very good). Most places that try to make biscuits and gravy up here in the northeast don't do it right and make it way too watery. Good, thick, southern biscuits and gravy is one of the best dishes ever created (IMO).

    I know this sounds :loco: :crazy::loco: :crazy: but I sometimes put a little syrup over the top...

    Wow. Biscuits & gravy plus grits. Not for this guy! I've always been puzzled as to why anyone would screw up a good biscuit by putting gravy on it. But let me explain. I like biscuits and I like gravy but separately, not together. No comment on the grits but I do not want any.
