    Done. 2 hrs 20 minutes. That leg quarter pulled free without cutting exposing that puddle of juice. 162 on the breast and 175-180 on the thighs / legs when I pulled it off. Its resting currently.

    The charcoal / wood thats left. This thing seals so well it snuffs out the charcoal very quickly.
