I like mine at 195. I do 24 hours as well because they stall so long. They have gotten to 205 before, As long as everyone likes them is what matters most. We are always our strongest critic.
By the way here's a job I did a few weeks back. This guy wanted me to blast and oil his tow behind offset. This one seemed a bit cobbed together to me, very rough welding and nothing appeared to be sealed much at all but nevertheless it got me thinking more about an offset "someday"
Beef ribs are my absolute favorite bbq. If you have an espresso maker check out franklin's bbq sauce recipe. Protip: add the espresso at the end so it doesn't cook into the sauce and lose its bite.
Sweet offset and nice job! Beef ribs are truly the holy grail of BBQ IMO, I know the brisket much talked about and suppose to be king but am telling you dino ribs are unreal!
For a while I was convinced a lot of things, including beef ribs, are better than brisket. But then I got a higher quality brisket from a local farm, and I really feel like I went out on a limb with it because it wasn't cheap at all, but good lord I think it was the best thing I ever smoked. And since then, I've done a couple cheaper ones that have come out very good too. So, I think I'm back on the brisket wagon. But beef ribs are great for something that doesn't require as much attention. Most beef ribs I've smoked have only taken 8 or less hours so that is a lot easier than an overnight brisket smoke.
The trick with brisket is you have to be willing to reject a whole lot of crappy briskets in pursuit of the right one. I maybe buy 1/30 briskets I check out. Has to have the right shape, color, marbling, tenderness (bend it to check). Then, you have to cook it right which starts with the trimming which is absolutely vitally important. Then, the finish temp which is resolved not with a thermometer but by probe testing the meat. Get all that right and you'll have a great brisket every time.
I got most of that down except selecting the best one lol. I thought I got a good one last time at Costco but half of the thing ended up being trimmed off! Didn't realize how much fat was really on it. Came out great, but about twice as fast as I expected due to cutting off so many lbs of fat.
