Is that ground beef and stuffed with some kind of corn mix or is it sausage and onion mix? Either way, gives me an idea of a shepherds pie calzone. Meatloaf mix stuffed with creamed corn, onion and smashed tators mix
beef stuffed with corn mixed with mayo,sriracha,and minced dried onions....regular large kernel corn.
Haven't been on in a while but im glad to see this thread still kickin' and Skeeter I'm always envious of your meals. Here's my last smoke from a couple weekends ago. Brisket on the Weber 22" smoker i ran for the first time. Had the smaller two sizes for many years before finding the big 22" on Craigslist last year for $60. Couldn't pass that up. It ran hotter than I'm used to but all that did was make the brisket finish up about 3 hrs sooner than I wanted lol. Still came out good. Did ribs too in a panic cus I wasn't confident the brisket would be good enough!
I love a ribeye but I think skirt steak may be my current favorite. Been getting these from a local farm and they are pretty dang tender for a skirt!
Not these...SPG only cus I do like to keep it simple. If I get any from the grocery store that are chewy like shoe leather I'm more likely to do something different or marinade them but these I just slice and serve. These come from a local grass fed farm which in the past I haven't been all that thrilled with grass fed but over the years I have found certain cuts seem to be way better and this must be one of them.
