The tree ripe peach company is coming to town and I want to get some. They only seek them at a half bushel, 25 lbs. So I'm thinking of freezing a bunch after going in with friends so we only get 12.5 lbs each Any tips on freezing them? T.Jeff Veal ?
I picked about 250 lbs of peaches off our tree last week, and a lot of them went into the freezer. I think there are 15 gallon bags full in there now. The rest are fermenting into peach wine. We quarter them, remove the pit, and skin them. Lay them out on cookie sheets or whatever lined with wax paper or parchment paper and freeze them overnight. Make sure to leave space in between the pieces. The next day bag them up in ziplocs or vacuum sealer. If you skip the cookie sheet step they will just turn into one big brick...this way you can easily seperate what you want for desserts, smoothies, margaritas, etc.
If the peaches are ripe enough you can pinch the skin between your thumb and the back of a knife and it should peel right off. If you have to cut the skin off they need to sit another day, especially if you are just going to freeze them.

We always had frozen peaches growing up. I do still do it on occasion. While slicing into a large bowl, sprinkle Fruit Fresh and lightly “stir”. Then we put them in plastic hard zip lock containers. That’s it. Great to eat half thawed when the time comes.
Mama used to freeze peaches all the time, she peeled and cut them into a big bowl, then scoopes them into quart bags with the juice and froze. As Jason said, the Fruit Fresh keeps them from turning dark.
My first time making it, so I'm not going to offer any advice. It might suck, or it might be really good. I used the same recipe I use for berry wine. We'll see.
My wife bought the 25 lb box of peaches today. We got the fruit fresh stuff and we have a bunch of gallon freezer bags. We'll grill some for dessert, take some for work lunch, and freeze a bunch.
We finished our peach season today. I have 2 batches of wine started and 17 gallon bags full in the freezer.
Hope ya'll enjoy those GA peaches. I looked up the tree ripe company. We have been to the Pearson Family Farm where the company gets the peaches and pecans. They make some great peach ice cream......ya'll need to try some on a hot day...
They are ripe now. We're having peach margaritas, thanks for the idea lukem , freezing sliced peaches, eating then as is, and just enjoying them.
We have a fruit stand about 20 min away that gets peaches from down south before their orchard gets ripe. We usually get a couple baskets every summer. When they get ripe, be ready to process fairly quick. Seems they want to go off fairly quickly (a week is pushing it) at least here. And if you freeze them, I wouldn't keep them but so long. They don't seem to hold up well in the freezer before they start tasting funny/old.
