OP is pretty far outside the native range of chestnut oak. I think you’re on the right track with white oak family anyway. It might be a bur oak.
white oak on the left, red oak on the right. There may be many variants but the lobes being pointed vs rounded is a major tell

Sikkens Cetol is rather popular for teak on boats right now. It's for the guys that don't want epoxy coating nor the constant oiling of teak to replace the natural oils weathered off nor constant varnishing. It will still peel like varnish but takes much longer, like maybe years instead of months.
Thats a biggun. What was the stump diameter? Cedar one of my favorites to mill. No tips on keeping the color though. Be sure to post pics of the slabs.
When I milled apple that had lots knots/crotches, I failed to keep it from warping/cupping and twisting. Several cinder block on top was not enough, I should have ratchet strapped them. Use caution there. I'm now in the process of flattening w/ a router sled and it's a slow go. Watch your sticker stack regularly the first couple weeks. It totally sucks to have spent all that time cutting slabs and now having to remove 1/2 the wood to get em flat. I always seem to learn the hard way.
Its pretty stable wood. I had no issues with cedar warping with minimal weight on top...just the slab cut off. I've thought of strapping the HL when it gets milled. You ever CSM any cedar Jason?
Nope. I was thinking we need smellovision. I can only imagine. That cherry I relocated to my wood shop rack started lifting 2 cinder blocks on one end. I just put some straps on it.
If you see it twisting or bowing, it's too late. I stacked 2-3 cinder blocks on top of each row of stickers on the apple and it wasn't near adequate. It really depends, many variables. If what you've been doing is keeping them flat, keep doing it. Sawdust Man has sawn lots of it so he'd be better advice than me.
It depends on how much attitude the wood has. Sometimes it doesn't take much if any weight, other times no amount is enough. Nice looking slabs!
