What's on the grill or smoker?

a rhode island hot link and some turkey with candied jalapenos

 

30 lbs of beef/pork/venison sausage.

 

Is that like a chorizo? I know that that is very popular in RI. I understand that there are a number of small shops that still make their own.

 

I suppose you could call it that,it's an all pork product with some heat,made by Westerly packing co.very good.

 

like that pop corn sutton,moonshine.

 

Next time I head up the shoreline I am going to put that as a stop.
Just looked at their website quick , looks like a place I would enjoy visiting , only about an hour from me.

 

they sure do have a long and interesting history....good to see someone carry on.

gettin some smoke on bandsaw chuck ribs,I'll refrigerate them overnight then tomorrow they go in my dutch oven for a batch of Texas chile

Does the pork meat shred off the bones, or do put the whole pieces in and fish out the bones?

 

It's beef....it will go In bones and all
