    Making progress. Learning that the back side of the grill gets hotter than the front. Probably due to the chimney being located at the back of the unit. Seems the heat streams toward the chimney.

    i should probably just spin the grill around every time I check it. In the above pic I had spun it 180 degrees after an hour and 10 minutes.
