Our Jotul is in the kitchen expressly for the purpose of being able to cook on it.
Generally, the hottest spot is towards the center, cooler at the sides. And if needed, a cookie rack or a piece of soapstone makes for a keep warm area.

My method is to pick all the meat then put what’s left in a large stock pot and let it simmer for a few hours. Then strain out the chunks and make soup out of the stock.

We've left the bones in the pot for a couple days. Makes a great and very healthy broth. A couple cups drank through the day on cold days is awesome, and some for the dog's food, adding water as we go to keep the volume up.

She eats her kibble with reckless abandon when its soaked in bone broth.
    She's a happy critter then!
