We had some friends over for calzones this evening. I tried a chunk of my homemade "Sasquatch" fire starters, and it worked well. I fed the oven some cut up oak snow stakes and then locust from a split rail fence that was beginning to rot. I fired it for 1 1/2 hours and it was cooking calzones in under 10 minutes. Prep going on inside while the oven was firing. First one out was double cheese and pepperoni. Next up was black forest ham and cheese. This next one was steak and cheese with mushrooms. Pretty good, it needs more cheese next time. I am thinking a "steak bomb" calzone would be good. Last one was ground Italian sausage with mozzarella cheese. This one is always a winner, one of my favorite combinations. Parting shot of the oven.
I'm glad your getting some good use out of the oven this summer. I showed my wife pics from the last time (with door on the opening) and she got her wheels turning. She wants to bake bread I it someday
Pardon my French but that's just kick azz all the way around. Love the oven. If you don't mind, I'd be interested in getting your dough recipe...looks perfect!
I want a oven like that for making pizza and bread in. I was hoping to build one this year but not looking good on time to do it.
These calzones had an egg wash on them, so they are darker than they would normally be. Here it is. 1 cup of water 110 degrees 1 teaspoon of yeast 3 cups of bread flour 1/2 teaspoon of salt Put the warm water in a mixer, add the yeast. Mix on low to medium adding the flour and salt. I let it mix until the dough rides up the dough hook. I use a spatula during mixing to make sure everything is off the sides. I turn it out onto a floured counter and knead it for only a minute. I set it to rise in a olive oiled bowl with plastic wrap for under an hour in a warm area. I knead it to only shape it. Once it is out, I just form it right up with really no kneading.
I encourage anyone to build one. Sure, it takes a little time to fire it up and prep the food, but I think the results are great. I mean, being outside, cooking, a hot open fire, a good adult beverage or three or four... Firing it for 1 1/2 hours yesterday could have provided about two hours of baking time after. That dome was hot. Once September hits and we have cooler days, it will be time for breads, roasts, meat pies and stews to have their go in it.

Will do. They are reporting a September polar vortex this fall. Cooler weather may be here sooner than expected.
I like how neat and tidy your calzones turn out as well as looking delicious. I haven't tried one again after the monster one I created. Only a week left of the holidays so as usual many ideas - not enough time.
