I grilled corn Tonight for the taco salad that my wife made. I don't know why I've never grilled it before, but this is the best way to do it.
I grilled out shrimp marinated in garlic, cilantro, coconut, lime, serrano pepper, soy sauce, and olive oil. It was marinated about 20 hours. It was really good. Served it with couscous and steamed artichokes. It was also a pretty healthy dinner. Washed down with an old fashioned. Sorry, we ate all the evidence before taking a picture.
Local Food Lion had Boston butts on for .99/lb, so got this 11.76 pounder. Trimmed at least half a point of excess fat off, and put it on the mb 1050 at 250 degrees. Should have put it on earlier than I did, but this lingering sinus infection is not making mornings pleasant. And I know how to crank heat later if needed...
