    Pulled it out of the smoker last night, covered & let it cool.
    Was really, really good warm & fresh off the smoker :)
    Been sampling since.

    Vacuum sealed a bunch this AM.

    Not many bear close to my area
    , now they hang out at the salmon creeks .

    That is one of the major reasons our state's population stays low. Too cold for many who are not born here. Many of us who get out and about come right back when we think about a safe place to have a family. The closer to the ocean, the temps are less extreme. We have a river about a half mile from my house that is tide water. I get to live on a dead end street where it is very quiet. Only bad thing is that it isn't a friendly place to earn a lot, or be able to keep what you earn. The more rural you are, the fewer the regs.

    I never really hated Maine winters - they just became tiresome, coupled with limited opportunity. Outside of a few offers from paperplants and one trash burner - that was demolished this past year in Biddeford, there wasn't much out there.
    The company I currently work for sold the Maine Hydro damms last year - that was potentially a retirement gig;)
