I use cream cheese, some grated Parmesan, colby jack, and some cajun seasoning for my filling. Mix it all up in the stand mixer. I also sprinkle the bacon with a little bit of brown sugar after they are on the smoker.

We are growing mammoth jalapeƱos this year in the garden, specifically for making these.

I don't know what ABT is but a friend made those at a party this spring and I stupidly ate one not knowing what it was. I said to myself... Oooooooo. Bacon..... Mmmmmmmmmm. Aaaaahhhhhh....mm mm.

Yeah, talk about a TRAP! Only after I had one 1/2 way down my throat did I realize the bacon was camouflaging some cream cheese and a hot as hell pepper! damm you bacon!

I spent the rest of the night chugging Pepto!

Bacon is both a blessing and a curse. :) I've made some pretty hot ABTs before (abt stands for atomic buffalo turd...just sort of what everyone seems to call these things) but these ones were real mild. The key is to scrape out all the seeds and membrane if you don't want the heat.

Your not kidding! I'm pretty sure at that point of adult beverage mode an actual bacon wrapped turd would have not been noticed until it was down the hatch :emb::bug:

I don't do very well with spicy foods or dairy, so the 1-2 punch of both plus "a few" beers was not nice to my poor stomach!

Hell yeah basod! Homemade Rotel? Get outta here. That would be awesome. This spring I went on a velveeta and rotel queso kick. I'd melt the velveeta, add the rotel along with some refried beans and a little can of diced jalaps and pretty much ate nothing but tacos and burritos covered with that stuff for about a month and a half straight. I survived...barely.
