Figured I'd just make a thread for this. Just threw my abts on the smoker at about 240F. Bought ten Jalapenos, sliced 'em in half and filled the halves with a mix of cream cheese, smoked sharp cheddar, sour cream, a bunch of rib rub and a dash of old bay. Wrapped 'em in bacon and in approx. 3 hours, I should be snacking like a king.
A little over an hour in and things are rolling along nicely. Temp is still at 240 and I just threw another handful of wet hickory chips on the smoker.
Yep. I'm just letting 'em roll at about 240F so, based on passed experience, 3 hours is about how long it takes for the bacon to start getting nice and crispy. Might be a little less time, might be a little longer...I judge everything off of the bacon.
Yeah WS! It's one of those things that doesn't cost much, is really easy to prepare and is downright delicious. Another use for any leftovers, by the way, is to chop them up and toss 'em into your chili...ridiculously good.
Might lift the lid in about 10 minutes for one more "progress" pic, then let her go till she's done. Still holding a good temp at 238F. I told my neighbor that I'd bring him and his wife a sample when they're done...I suspect they'll be buying some jalapenos in the next few days.
.... I like your recipe. I'll have to check it out. I just always went plain jane... Bacon, cream cheese, and Japs.. Smoke cheddar cheese? How did you mix that up with the cream cheese and sour cream?
That sounds great! A couple years ago I made them like this but also added some grilled halibut...words don't do those things justice so I won't even try.
Two words...Food Processor! I cut a 8oz. cube of cream cheese up then grate the cheddar on top of that, then add a TBSP or three of rib rub and a couple dashes of old bay...spin that around until it gets mixed up and sort of fluffy and spoon it into the jalapenos. Wrap with bacon and Voila! edit: forgot to mention the dollop of sour cream into the food processor.
I got ya there. I usually do mine on the grill but that cooks a lot faster and I stick them in a turkey pan but Im never able to get the bacon nice and crispy. Im going to have to try something different this weekend and try to get the bacon crispier.
Oh another thing my buddy does is mix together crab meat cream cheese garlic and chedder for the jalapeno stuffing then of course wrap it all in bacon
You have some patience waiting 3 hrs to eat. I'm more of a 30secs nuke in the microwave type of cook!
ha! truth is so am I, but when it comes to certain things I've learned that it'll be done when it's done.
I'm a huge fan of every single ingredient you just listed...I just ate a bunch of ABTs and now your making me hungry again. Just stop it.
