I like that eggs are so good for you, but they're a bit boring also. Actually, they're kinda hard to eat just plain. What do you hoarders do to make your eggs more tolerable?
Fried egg sandwiches. With ham, bacon, or sausage, on an english muffin or bagel, with a slice of cheese. Omelets work, with home fries. No need to be fancy. A scramble works just as well. Not just for breakfast. Anytime of day.
Miss July has a good breakfast casserole recipe thats usually a hit whenever we take it for a gathering. Includes bacon, fried onion, eggs, (frozen) hashbrowns, cottage cheese, 2 shredded cheeses, salt and pepper. Baked in the oven. We'll even make it up a day early then just bake it in the camper when we're camping or for a gtg. Travels well. Stores easy.
I dont know... I must be boring... a lot of time I'll fry up 3 eggs, with just pepper not much of a salt person, for breakfast. Costco has this really awesome cinnamon bread, that makes fantastic grilled egg sandwiches. Breakfast cassoles... Breadfast Burritos (instead of McDonalds BB's) ... Yes... I'll second that... Its making me hungry just thinking about it....
I love eggs! Over easy on a sandwich with ham or bacon and cheese. Over easy on French fries or tator tots! I love scrambled eggs as well. I don’t care if they are considered good for you or not, I think they are good for you.
Fried egg sammiches are my favorite. Plain hard boiled eggs, I like salt to season them. Scrambled eggs, my wife makes them the way chef Gordon Ramsay makes them. They are a lot better that way. Omelettes, yes, please.
Huevos rancheros are a staple here, very filling. We make homemade refried beans but canned are good too. Corn tortillas, beans, eggs, cheese and toppings like a taco.
Generally, we cook ours before eating. That works well. Another way is to get to know this wonderful woman who makes a delicious breakfast casserole...
My Sunday breakfast treat. Eggs-maybe an omelette, maybe over easy with bacon, or with pancakes. Good enough for me.
When you see pickled pink sausage jars at store with a couple sausage left. Buy the 1.5 gallon container. Hard boil eggs throw them in brine til pink
Back in the day (late '70's) going out the door to shoe horses would crack two or three eggs in a glass and drink them down. My Mrs. scrambles some eggs for brunch (after morning chores) while I cut up a green pepper or a small onion. Also a quick egg sandwich, crack an egg into a small bowl, scramble, add a drop of water and put in the microwave. My folk's microwave they set at a minute, ours 50 seconds is good. This is a great egg sandwich very easily!
Our favourite quick dinner is to separate 4 eggs, beat the egg whites until stiff, beat the egg yolks in a separate bowl and add green onions, red peppers, corn, dill or basil and home canned Pacific salmon (yes, we are spoiled). Fold the egg whites into the egg yolk mixture and then cook in a fry pan until the egg is set. I like mine with tarter sauce and campinspecter like Ketchup on his.
I like them any way except bland. favorite breakfast is corn beef hash, three eggs over easy, toast, sausage, bacon and hot sauce. Or, a southern breakfast sandwich. which is sauage patty with cheese and a fried egg with mayo and hot sauce. Can't find those in Montana although. scrambled eggs are good with grits if the grits are cooked properly. (can't find grits in my part of Montana either)
