With Chaz on this 2nd shift, I have been struggling sometimes with our dinners so he has left overs to take to work. Goulash and spaghetti on days off is always good for a couple days as is when I fix meatloaf. Pork loin that we cooked over the weekend as well as a lot was sliced up and vacuum sealed. What do the rest of you do.
Does he have access to a microwave? If yes, then - Stews chili Tomato sauce w/meat & pasta Mac n cheese with chicken Settlers beans - Settlers Beans (The BEST Baked Beans Ever!) If not, then - Sandwiches Tuna or chicken salad, with chips/crackers to dip Carrot/celery sticks w/ranch dressing
Kraut burgers We used to make bulk batches of meatballs sandwiches and wrap/freeze them individually I'll also make breakfast burritos in bulk, they are just as good at night as they are at breakfast I had a neighbor that would buy the xl tortillas, remind me of Qdoba size tortillas, boy she packed a lot in each one! Green What are his favorites? I got pretty creative with a large size muffin pan, 6 cups to a tray instead 12 smaller ones, freeze inidvidual "muffins". Meatloaves, steel cut oatmeal, Shepards pies/tamale pies. Green chili and another of frozen cooked rice. Oh, and loaded chef salad, I like to add cooked frozen chicken fingers with honey mustard like one I had a restaurant.
When we were working, we would have a large meal Sunday afternoon. Lasagna, sausage and Ziti, homemade soups, Stew, Mac n Cheese, Meatballs for subs or spaghetti, etc... My wife would make enough so I cloud take some each day at work. Sometimes we would even have enough to freeze a few meals. They’re great to grab one out of the freezer when needed. Since we haven’t been working we’ve been eating the meals that are in the freezer. My wife is a great cook, it’s nice to have a bunch of her different meals available.
When both of our two boys moved out of the house, my wife kept making the same size meals and froze a lot of the extra for quick meals at a later date. If you are going to make a mess in the kitchen with cooking it is a good idea to make the mess once for many meals.
My husband lives on Spanish rice. One pkg turkey burger & half a Jimmy Dean hot sausage roll Brown and drain Lightly toast 3/4 c rice in the skillet with a tbsp of olive oil Add one and a half cup chicken stock, one small can of spicy tomato sauce ( I use El Pato), and one packet of Sazon Goya seasoning. Cover and cook until rice is tender. Add the meat back in. Dress it up with avocado, zucchini, or cilantro or something.
Most of the time I take my lunch to work and the majority of the time it is whatever we had for dinner the night before , there is the occasional sandwich but not that often. It's just the two of us so we always make extra and figure on it for the next day. Keeps it so I am not eating the same thing multiple days in a row this way.
Friday night's are no leftover night. Hamburgers, sloppy Joe's, etc. Then Saturday and Sunday are the big meal dinners. Whatever he cooks you can guarantee he will have at least two meals for work. So I am trying to figure out different ideas so it doesn't old. When he is working I do something small for me. I really would like to thank everybody again for joining me.
I make a batch of three bean, shredded chicken and lots of seasoning/spicy stuff and crumble feta on top- I’ve been eating this for lunch and dinner 6 days a week for 3 years- all that fiber keeps my diverticulitis at bay. I do splurge occasionally at work or Friday nights, but really not too often. So yeah- I can eat the same thing all the time.
Wow! That’s great! My “diet” isn’t very good. I’ve cut out a ton of ice cream I have been exercising I gotta get my Cholesterol down!
I have a ham and cheese sandwich, a small bag of chips, and a “treat”-packaged cupcake or something like it 5 days a week-not much of a gourmet and it a quick lunch to eat in a few minutes.
He is not much of a sandwich eater. We normally don't have chips and snacks around. Not saying we don't eat them but not often.
One of my favorites... Beef stroganoff (although we do cheat and use some ground turkey too) good hot or cold, or room temp!
I should also mention that usually my leftovers are usually breakfast as well. I often get a strange look when morning break rolls around and others are eating doughnuts and muffins I might be eating spagetti and meat-balls , burgers or whatever from the night before. Fine with me since I am not a doughnut kind of guy.
I never cared for sandwich's I liked leftover pasta and such even if it was cold. Now that I retired I still prefer leftovers. Worked with a guy that ate PB sandwich 1 day and Jelly sandwich the next ever other day he did that for as long as I knew him!
