    Well, a new toy somehow got on the truck and followed us home today. Would like some suggestions on how to cook with it, maybe a recipe?

    Yes sir. That's where this started. Apple sausage....my hunny has been talking about them for awhile. Finally found out who brought them. Just got 10 lbs from PA today. He told me we needed to be careful cooking them because of the sugar content. While we were at Agri-Supply to get a landscape rake, we saw that smoker. I've been wanting one, she finally admitted she wanted one too. Hope Chvymn99 can tell me how he cooked the ones at the GTG.... Thanks , brother.

    Well Congrats on the new toy....:handshake: ... as far as cooking them apple sausages :drool: I probably did it around either my set point of 180 or 225 ..... since those two are my go to temps on the dial... keep flipping them periodically so they dont over cook on one side....

    I need to pick your brain on other foods too. Burgers, ribs, wings, maybe butts.
    What about pellets? The Ace Hardware has a good selection of Traeger pellets.
    Alder, maple, cherry, hickory, pecan, apple, oak and several blends.
    I really wanted one of those grills, but their price was $300 more for a smaller grill...maybe the Pit Boss won't know the difference.

    Very nice. I've had a smoker for years. But, have very little advice to offer on a pellet type.

    Sounds like you have a few members to help out. Congrats and enjoy what comes out of it.

    Pick away... :D but the best way to learn is cooking with it and learn to trust it.. Learn with less $$$ meats...before going for those long smokes... As far as Traeger goes its a name brand. I was about ready to take it back to Costco for a refund... Did some research... Pick a few brains around here (theres a thread I think here on it)... Finely fined tuned it and its much more repeatable... Plus one more thing I found out this winter was I cook in the garage just far enough to keep the sun off of it or set up the canopy... The suns heat on that lid influences the temperature readout...

    As far as pellets goes... I like the Traeger Pecan pellet...Have had good results with it... Just make sure to keep the pellets in a dry environment.... Wet pellets dont burn...:whistle:... So I keep it in the garage...

    Smoked Mac n cheese


    2 cups elbow macaroni
    1/2 stick of butter
    3 cups milk
    2 cups heavy whipping cream
    1 package shredded cheddar cheese (the ones you see at the grocery store, 8oz I believe)
    1 package combination of colby and monterey jack cheese cubes (same as above 8oz I believe)
    salt and pepper

    Put the dry macaroni elbows in a pan (somewhere around 9x13 size) - dry macaroni. You don't need to pre cook.
    Melt a 1/2 stick of butter, and then pour it over the macaroni
    Add cheddar cheese
    Add colby and monterey jack cheese
    Add milk
    Add heavy whipping cream
    Salt and pepper to taste
    Give it a stir

    Into the smoker at 250 degrees for approximately 2 hrs

    Nice smoker. A good friend of mine's fiancee has a food trailer business. They use pellets and it's just not for me. He offered to loan one to try it out but I'm just passionate about the real wood and charcoal. I was looking at offset smokers till I got the furlough call.
    Hope it serves you well!

    I don't have a specific recipe, just do what works for me. Smoke meats 225-250 till a specific temp is reached. I can recommend this:

    Hands down the best rub we've ever tried. They have many others too. It's great!

    Ribs I follow the 3.2.1 method and adjust to size of racks. Smaller ones might be 2.1.1. So 3 hours on smoke, 2 wrapped in foil (usually pour some apple juice concentrate in with ribs), 1 out of foil on the smoker with sauce.

    That's a good load for your first cook! The mrs got me a pitboss last yr for Father's day and I just can't stop cooking on it. Not much selection for pellets around here except pitboss brand. I've had good luck with their competition blend for most meats but I've used their apple and hickory for certain smokes too. I just got an order of bear mountain pellets in (apple and oak). I used the apple on some pork belly with great results.

    There's definitely a learning curve (coming from a vertical electric smoker that used chips) but you'll get er figured out. Here's my rig.

    Hahaha! Rainbow the bunny is safe and sound in her house.

    The probe definitely comes in handy. There's a few wireless wifi probes on the market. They look pretty slick.

    Lowes sells a battery powered one with a wireless sender and a unit you carry around with an alarm and all the temp info. Works pretty well. Beats my old, low tech way of looking out the upstairs window with binoculars at the controller!
