    We are doing similar, except stuffing that recipe in the bird's cavity along with quartered apples and an herbed butter under the skin. I better get started here soon!

    You mean stuffing stuffing? I love dressing/ stuffing, but I'm anti actually stuffing the bird for reasons you surely have heard. We cook ours on the side in a casserole dish. We always put a bouquet of fresh herbs, thyme, rosemary, and sage that I grow plus lemon/ orange in the cavity. Another dry brine recipe I saw says that if you let it go 2-3 days, that the dry brine on top, and not under the skin, does the same brine thing as wet brining and getting the brine between the skin and breast meat. We'll find out. Someone here on FHC in the smokehouse section said he's been dry brining chickens with great results after switching from wet brines. IIRC he says he's had the same results as wet brining.



    Our bird is only a 10.5 lb bird for the two of us. I'm letting it get up to room temperature before putting ours in the oven. We did a bunch of prep last night to make today's cooking and timing of the feast easier. That dual oven we bought years ago sure helps too.

    Sage stuffing on the side as well as fried stuffing croquettes. We don't put it in the bird rather like you, lemon,apple,onion, rosemary, sage and thyme in the bird. We'll be eating shortly here.... can't wait!

    I won't start heating the oil for another hour or so. I peeled the taters. Wife has the green bean cas in the crock pot. My youngest made the sweet potato casserole, pumpkin pie yesterday. It's very nice having a 13 almost 14 y/o that likes to cook. Only the 4 of us and my MIL that doesn't eat much. Stuffing is being worked on as I type.

    This is the start of real southern stuffing.
    Iron skillet, buttermilk cornbread.

    A granny smith apple, onions, walnuts, raisins, celery, seasoning.
    Part in the bird, the rest in a dish.

    Everybody's dinners sound and look so good!



    Just put back 1 plate, can usually do 2- not even a breakfast! I'm becoming a lightweight!

    Turkey, stuffing, corn, stuffing croquettes, mashed potatoes, cranberry sauce, dinner rolls, croissants, and of course gravy, pumpkin eggnog, and cider!

    Another plate along with desserts- pumpkin & apple pie, raspberry danish will be consumed later!

    Chickens & dogs also got a Thanksgiving dinner.

    Thanks! It's basically a stuffing recipe and you can add turkey pcs, or chicken pcs. Deep or pan fry. Kinda like a chicken croquette. Top with gravy, delicious!

    I guess I’ll have to drool over these pics. :drool:
    Currently laying on an ice pack due to unknown cause of near lower back failure. Not the best way to enjoy T day. :confused:
    I still don’t understand those reasons. It was the norm for most of my family’s history and everybody survived. Not arguing, just amazed at how these things change. :picard:
