    Twice baked red potatoes mashed with cream cheese, shredded cheese, rotisserie chicken ( meijer ) :whistle: , home made applewood baked beans! Green beans are cooking!

    I used apple wood spice and liquid smoke man are they good!

    That looks delicious! Can I ask why the potatoes are baked twice?

    They are called twice baked but in actuality they are cut up then boiled mashed like normal. After that you add anything you want to them like cream cheese then they go in the oven and get cooked again.

    My favorite way is-
    Red potatoes cut up boiled
    Hand mashed
    Milk
    Cream Cheese
    Bacon Bits
    Garlic
    Chives

    Then put in an oven dish and covered with shredded cheese and baked at 350 for 30 minutes.


    You can also do them like a baked potato! They are really good with veggies or chili added then baked.

    Looks great Pete. I'll have to look for apple wood spice. This is the first I've heard of it. Homemade baked beans are great with some smoked pork in it.
