Looks like folks here had lots of yummy eats! My 16 year old son requested I smoke a 12 lbs turkey so I fired up the Joe. Wet brined for 24 hours and then smoked around 200f ish for 3 hours then a quick 20 minutes in the oven. The family loved it saying the apple smoke was just right and my wife who is sensitive to salt said my brine was perfect. Ive had a few smoked turkey misses along with some great ones over the years, Im glad this one was a hit. It came out very juicy and tender. Temp while smoking was holding at about -22c/-7f. I find it neat that when my smoker is heating up I get smoked icicles on the bottom.
Seems this one is allergic to shellfish. That was fun. As you can tell by the scar on her forehead she is tough, her mamma on the other hand….
Yeah, that was last night. Some Benadryl and time she was back to her happy less swollen self. I think mom is still traumatized.
Ok...New Years... simple, easy. Shrimp in a little olive oil with lots of garlic. Homemade Mac and cheese, with caramelized onions Steamed trees and clouds (broccoli/cauliflower)
Another Sous Vide Christmas. Well, two dishes. We had individual beef tenderloin steaks that we picked up at the warehouse club. Seasoned and vac sealed those. We did asparagus in the other sous vide. Whipped potatoes and a broccoli casserole were cooked separately. Amazing dinner.
What's everyone got goin on tonight? I got a pizza stone for Christmas so we're gonna let the kids make their own pizzas and give it a go on the smoker. I'll probably whip up some smoked mac and cheese as well in case the pizzas are a failure haha.
We're making tempura tonight. Shrimp and veggies. We've got a bottle of bubbly too. I'll see how many bowl games I can watch before my wife comments

Picture 0106 was are first time we made the Gnocchi casserole, 0109 & 0111 is a prime rib, 0113,0114,0116,0118 is the second time we made the Gnocchi casserole and the last was some meat loaves browned up in a skillet and baked in the oven. The wife has some white bean soup coming up.
