You got to love a top fermenting yeast. Heck,'I would consider bottling a bit of it with some champagne yeast.
Did some brewing years ago. Last brew was a Christmas beer, with a lot of spices in it, cinn, cloves etc. We were just married and in a rental house on a lake, just keeping the house warm for the winter. The air trap plugged with the spices and I didn't catch it, the thing exploded in the middle of the night, emptied about half of the volume straight up, hit the ceiling with enough force to spread the mess over the entire kitchen. I finished the brew anyway, tasted like potpourri. That was the last time I brewed. I don't do alcohol anymore...wonder if you can make NA home brew.
