Ok, that's enough for a year. Anyone that's cooked with ginger knows it goes a long way. We needed a 1" chunk for an Indian chicken recipe my wife picked up a long time ago. Well, ginger root is cheap at least. So, what to do with the extra ginger? Make ginger beer! Never done this before, but it looks easy. I used this recipe. I have burped the bottle twice, and it's been making pressure, so that is telling me that the yeast is eating the sugar and fermenting. Moscow mules on Sunday is the goal!

Yeah, there's quite a bit left after this recipe, and then that Indian recipe which will be in a few days. I tasted the ginger syrup, which was step 1 of the recipe, and it tasted great. If this 2 liter of ginger beer recipe works, I'll be very happy. If not, I'm not out much. I used Reverse Osmosis water, but reading the reviews, most tap water will work, provided is not too chlorinated.
You can freeze it, it keeps a long time. We put it in a ziploc bag in the freezer. When we need some we use the potato peeler on the skin and then grate off what we need with a microplane. It will turn to mush if you let it thaw.
Use a spoon to peel the skin off. You lose less compared to a potato peeler. then a small plane is used to grate it. Had ginger in a salad tonight. Delicious. The ginger beer is all gone. I might make more soon, but I will definitely make this recipe again.
