Some Labor Day keyhole pit chicken!!

    We did a smaller rack of vinegar chicken for Labor Day yesterday over some oak and plumwood. Danny Overkill says hi to everyone at FHC!

    With a few splits of plumwood, the vinegar/olive oil mix spray, and some poultry seasoning every time we flip it, I think you can imagine how good the backyard smells at this point of the game!

    How does it look? I can tell you one thing, it tasted fantastic! Hope 3veryone had a great Labor Day!!

    It's probably 6" or so, I let it sizzle for 2-3 min each flip, soaking it down with the vinegar mix every flip.

    I pre-boil my chicken, so it's moist and cooked internally without burning the skin.....I'll cook it til it's nice and tan.
