    Hello
Many of the Tuna recipes on the Internet involve brining and wrapping and putting in the fridge for 4 hours and drying for 1-2 hours by an open window. This is fine for that nice Smokey and salty flavor.
I wanted a moist smoked Tuna Steak Dinner without all the fuss!
I found that if I set the smoker for 275 Deg F and set the meat probe to 135 until the first filet hits 135 Degs F inside! Then it is done all the way through and still perfectly moist and I take it off right away!
This takes 1.5 hours and bingo. It does not have the full Smokey salty flavor but it is still moist and cooked just right for my taste!
In preparation, I cut the steaks to hand size pieces.
We put a simple marinade of olive oil, black pepper and freshly squeezed lemon juice, garlic powder, a dash of onion powder and dried oregano. I then sprayed the grill with the best Weber grill spray and covered the drip tray with 18” wide Renolds wrap for easy cleanup.
After the smoker was up to 275 Deg F we inserted the meat probe set to 135 Deg F and bingo!
Fresh cooked super moist Tuna steaks without all the fuss!
This had a nice taste of Lemon but to add even more flavor we put a mixture of honey and sesame seeds for a very tasty meal with potato salad and cole slaw.

Fresh tuna needs no heat! If you must, a quick sear on a super hot fire!
