Anyone got a good salami recipe? I want to make some venison salami. Ordered some fibrous casings...should be here today...not sure if it includes any recipes or not.

My buddy and I tried to make bologna once, smoked in his green egg style cooker - all I can tell you is weights and measurements count, especially after a few brews stuff was way too salty - my dogs licked the slices for a while before considering consumption
