Salami?

    Anyone got a good salami recipe? I want to make some venison salami. Ordered some fibrous casings...should be here today...not sure if it includes any recipes or not.

    Can't help you with any recipies, but the very best salami I've ever had comes from here, famous tv Chef Mario Batali's father.

    My buddy and I tried to make bologna once, smoked in his green egg style cooker - all I can tell you is weights and measurements count, especially after a few brews:emb:
    stuff was way too salty - my dogs licked the slices for a while before considering consumption

    4.5 lbs ground venison
    1/4 C Mortons tender quick curing salt
    1.5 teaspoon garlic powder
    1.5 teaspoon black pepper
    2 Tablespoon liquid smoke
    Hot sauce to taste...optional

    Mix and chill 24 hours
    Pack in casings
    4 Hours @ 225

    Making it this weekend

    There aren't any...hands to gross to take pics while making...and we've all seen the finished product anyway.
