Pickled egg recipes

    What's your best pickled egg recipes? A guy at work brought in some pickled quail eggs (fantastic) but he won't give up the recipe.

    Pickled eggs = good but never tried doing my own.

    I do know that the ones I had make my after-burner leave more of a vapor trail than normal!

    Would be interested in giving this a shot.

    My buddy's wiife does some awesome pickled jalapeno eggs. I'll try to get that recipe. Because it makes some great potatoe salad.

    I think my wife's recipe is hard boiled Eggs, vinegar, pickling spices and beets with beet juice and thin sliced onions.

    I've heard of people using leftover pickle juice from pickles they enjoy. Boil and peel the eggs and put them in the jar with juice. Give them a week and taste.

    Talking with a guy at work and he started making his eggs with 50/50 his standard vinegar and spice mix and spicy bloody mary mix. He doesn't can them its more a refrigerator pickles type but he said they don't last long enough to worry about them going bad. Hopefully he will bring a sample for me.

    So I just talked to my buddy. He gets one of those big glass jars puts his boiled eggs in it and then loads it up with hot jalapeno's in the jars till the juice is above the eggs. Then lets them sit for about a month. I know when she makes them into potato salad, its awesome on 4th of July. I just bought 8 jars of jalapeno's for a batch tomorrow night. Hopefully will take them to the GTG at the end of the month.

    I always make 3 dz. (So use that recipe)

    Might be a little hard to read, let me know if you need a translation...
    Add pepper to taste, i forgot that on the 3 dz version...
    Refrigerate 5 days if you can wait that long.

    I like to use leftover pickle, jalapeno, green olive, and pepperoncini juice all mixed together. I'll add some sugar but never measure it. Hard part is keeping my wife from throwing out the juice. Biggest thing for myself is using eggs from the grocery store, not ours. They peel better if a few weeks old in the fridge.

    Boy! Sometimes the eggs will fight ya!
    Last time i made them, i boiled the (store bought) eggs about 20 minutes (about twice the normal time) then cooled them to about 100° and peeled them.
    That seemed to work real good.

    Occasionally I'll use a spoon if i get a difficult one. Just wiggle the spoon side to side as you're going in under the membrane

    Holy shnikes!!! Wife came home from store, had 1 dozen eggs and said whatever you do don't drop them. Limit 1 dozen and there were only a few dozen left. Big sign saying they are having supplier shortages because of avian flu and flocks being euthanized once infection is detected. Expect long term shortages because a facility must remain bird free for 4 months after detection.

    What I have found works well on eggs for peeling and it doesn't matter if they are old or farm fresh that day, don't let water touch them in the cooking process. Set eggs out 1/2 hr to warm up. Put a little water in bottom of kettle and get boiling. Place eggs in steamer basket and suspend over boiling water, cover and steam away for 22 minutes. Once done dump eggs in ice water bath to rapidly cool. Once cool they peel like a dream.

    I can't do video cause I'm too ignorant, but I'll post a pic when I get it figured. I use to have this chicken presto type device that you would poke a hole in the bottom of the egg before steaming. I think if I use crack the bottom of the egg and poke a hole in the top, then use the compressor to blow through the top, it'll end up helping separate the membrane. Could be messy until I get the air pressure right.

    I have over a gallon left in the fridge still.

    Glad this thread popped back up. I didn't report in. Here is it....I tried it Saturday night before Easter. It works well if you just crack the top of the egg gently and get the air under the membrane only. Did three eggs before I found out that I forgot to drain my air tank before using last time. Got some nasty all over those three eggs and some on the kitchen window.

    Don't you find it strange (Or not so strange) ? That right before the busiest EGG SELLING time of year that there is another excuse for huge price increases and shortages?
