Excellent Woodwidow. They look delicious. I have to ask, do the temps in the chute vary from the top to the bottom? Half the challenge in cooking like this is figuring out timing when to put the food in. I second the butter choice.
Yes, deep in the base is the hottest refractory. The burn chamber refractory can get up to 2,000 degrees F. At the top, the burn chamber is surrounded by the water jacket so it cools off quicker. You are right about the timing as it also depends on how long the burn was to bring up the temperature of the storage unit and how much time elapsed between burns. After a 8 hour burn, with the fire out, the refractory can store enough heat to put up to another 200,000 BTUs into storage! The olive oil tastes alright too. We are starting to switch to olive oil instead of butter or margarine. Olive oil just doesn't have that salt taste that we have programmed our taste buds to expect.
