    Hatch chilis are here. 48 hours out of the fields.

    Finally, with some time on my hands....got a bushel of hot and one of mild.
    Hand roasted. None of the blow torch business.

    Steamed by their own heat for at least 1/2 hour.....then bagged
    and into the freezer. Chili packs have 4 med and two hot for making
    green chili. Single hot packs have 3 hots for whatever. The payoff....

    Colorado green chili. I like to add some flour after its cooked. I like it thick
    so it hangs on to a dipped quesadilla or stays put on a smothered burrito.

    Oh how I loved the smothered burrito at the Firehouse in Windsor. Sigh.

    The small grocery up the way family owned does a hatch chilies cookout at the end of summer. They didn’t get to do it because of crop failure. I should have asked more about it but everything was canceled and scrubbed. Hm

    That's interesting. I thought that the chilis were late this year.
    The place where I got these said a cold spring and too much rain
    and hail really set it back. Usually you will see the stands around for
    about 6 wks.....not this year. He said they will all be gone in a few weeks.
    He also had some really crappy looking stuff out on his tables. I told him
    I wasn't going with that stuff. He said ok.....can you come tomorrow...…….
    truck from NM arriving in the am. I got the good stuff.

    At least you waited but it was a cooler summer for us up here in WA. Who knows. Maybe next year will have to do.
