    After watching the New Year's eats thread, my gluttonous ways gave me a hankering. Does anyone have a recipe they would share or have ideas to throw out to create a ring of pork and kraut sausage. Maybe even put some potatoes in or whatever would be good. What pices or anything else to make it taste like a good old-fashioned pork and kraut meal in a ring of sausage!

    Ok, thought process..

    I'd think it would be best to drain the kraut quite a bit, if adding potatoes, finely diced and maybe a bit pre-cooked in the oven, add to the ground pork along with some salt/pepper/seasoning then mix well, stuff casing and smoke for a few hours on low heat with a very mild wood.

    Hmmm.. possibilities here.

    I like the start we have going here. Kinda thinking that spice/salt wise a guy probably would want to not use tender quick if my thinking is right. Using that may turn the pork flavor to more of a ham flavor, not that that's a bad thing but we are going for a traditional pork and kraut flavor. What other spices or ingredients do you think would enhance the creation?

    Marjoram, coarse black pepper, allspice, salt, sugar are used in a fresh kielbasa recipe. I wouldn't smoke it for pork/kraut though.

    Kinda stretching because it would be a lot of work but.....instead of potatoes if a feller made some heavy dumplings, flour & egg and boiled, cube them up and replace the potatoes with dumpling chunks. Have a pork/kraut/dumpling ring sausage! :drool::beerbbq:
