How do you measure flue temperatures?

I’m more and more interested in refining my craft when burning. My chimneys are about 20 feet up on a 7/12 pitch roof. How do you measure your flue gas temps easily? Ideally I’d like to record and trend them. Thoughts?

It depends on what you have. For us, we have single wall pipe so can just stick a thermometer on there to measure the temperature or use an IR gun.

The other way is to install a probe.
