To those of you that were at the New England GTG and had some of my relish this is how it goes Bang-Z’s Hot Pepper Relish ½ bushel finely chopped assorted hot peppers ½ cup finely chopped onion 2 tablespoons salt 5 cups sugar 3 cups vinegar ½ teaspoon ground cloves Wash and drain peppers remove seeds and ribs; fine chop Peppers and Onions. Mix with salt. Let stand 3 to 4 hours. Drain. Add sugar and vinegar, cloves. Boil until thick. Pour, boiling hot, into hot jars. Put lid on jar; screw band tight wait till sealed Fine chop peppers and onion add salt let set 3 - 4 hours and drain, add the rest of the ingredients and cook until thick This is how you know it is ready to jar. . Put relish into hot jars and seal.
