No recipes for stew, but I do have a bag of chicken bones in the freezer. I'm thinking with the cold weather and the wood stove fired up, that it's chicken soup time. Bones in a stock pot, and on the stove it goes.

Dump some chicken or veggie broth in a pan. Dice up a red onion and add it to the broth. Dice up some Chourico (spicy portuguese sausage) and add that too. Dump in a bag of precut coleslaw mixings and simmer away until the cabbage is limp.

I just go with the flavors present. The Chourico is pretty flavorful.

Stew= meat, beef broth (or water and beef bullion), potato, carrot, onion, salt, pepper. Potato should thicken, but if you cant wait, starch or flour with thicken. Add the things you like, garlic, bell pepper, celery, cheese. Serve over rice, and with some kind of hearty bread.

Google .....Dublin Coddle....bacon,sausage,potatoes,etc. I always put it in a dutch oven inside the oven.....I beleive wood fired cooker would work well also. This stuff is awesome...try serve with home made bread or bread of a more dense texter...

This looks great! The wife is going into the city today to see her aunt I’ll have this ready when she gets home.

Is it ok to put the enamel Dutch oven right on top of the stove? I’ll be in the doghouse if I mess that pot up.

Probably not a good idea, I used mine in the bbq, turned out fine as i was just cooking over it but if you’re on direct heat, jury is out on that. If its straight cast iron, you’re better off. I have a camp style oven, it’s got the legs on it to use for briquettes and over it too.

I have an enamel covered Dutch over from Le Cruset. It's cast iron underneath the enamel.

I use it all the time on the propane stove top. I don't see why on the wood stove would make a difference.

I bought an enameled cast Dutch over several years ago specifically for use on the wood stove. Don’t have to worry about tomato bases in stews and chili eating the seasoning off anymore. Works great. Goes directly on the top of the NC30, no trivet. Had some New England clam chowder on all afternoon.
