So, found this guy, and the recipe and have been wanting to give it a shot for a couple months. They're in the oven. Pics to follow. ........
I think he may have eaten all of 'em. He does seem to taste test all the dishes he videos. Tough job.
First batch out of the oven. Not as good as I thought, but still good. More like a sorta quiche than cheesecake. I knew that was a lotta eggs. We had some little graham cracker baking things in the cabinet, so I used those. Emptied some out and did some w/o the crust. Should be interesting.
My thought exactly. Wife likes 'em. W/o the crust, they're more like a custard/quiche. We'll def. eat 'em.
Another thought is to add some soften Philly Cream Cheese to the ricot 1st may beef it up some then add the eggs .
Not sure how well it would set with fewer eggs. I have a cheesecake recipe using cream cheese. Gooder stuff. It's been a while, but I've made a couple NY style cakes too.......my favorite.
Have you ever tried Ricotta pie? I have a very good friend, an Italian, literally "off the boat", he is a fantastic cook. He made a ricotta pie once, he said ricotta pie is very special, and in his neighborhood they only appeared if one was about to ask a special favor or if one was very sorry.
I have from my Honey's side ,her grand mother and Aunt were Awesome cooks ,everything was home made pasta included I miss them dearly
