i should note that I could not find pickled ginger so I used a ginger paste that was in the ethnic food isle at the supermarket.

Looks tasty BCB. As far as stuff like pickled ginger (or just about anything else that is tough to find in the average grocery), Amazon is a good way to go.
Went to the expensive nice grocery here to get this stuff tonight. Couldn't find half of it....mad as all h3ll, I got this.
Let me know how that comes out. I read on another site that someone used the Gen. Tso's mix from Aldi and said it was fine.
For quick and easy, it was ok and I would do it again if time is a concern. As far as gourmet, no...it wasnt. I'll guarantee your version is much better and I'll still be trying it once I get the ingredients.
Wow, this looks like a keeper. FYI-- I make my own pickled ginger, it is really easy. You get a couple nice ginger roots from the supermarket, peel them with a spoon(trust me, this is the easiest way!), then slice thin--I use a potato peeler. Take 1 cup rice vinegar(you can use regular white vinegar if you like), 1/2 cup sugar more or less, and a teaspoon of salt, and bring it to a boil. then put the ginger in a mason jar and pour the boiling mixture over it. Let it sit for a day or two in the refrigerator, and it will last a long time. But if you are like me and are addicted to sushi ginger, it won't last.
