    We've never canned any meat just vegetables. Been thinking about canning some bear meat and deer. Do you add onions or carrots to yours ?

    Watching canning videos, there are some many things you can do with canning. They make it look simple. As did my mom when I was a hell raising boy.

    It is easy really,but cleanliness is vital.
    The most tender meat I ever had was canned

    I canned 12 pints of venison last winter.
    I brought some to a friend's for New Year dinner, it was a big hit.
    My favorite way to serve is to thicken the juice it is canned in with a little flour or cornstarch to make gravy, and serve over mashed taters. I am having it for Saturday night supper.
    In my opinion, this is the best way to tenderize venison. I just cut in chunks, add a little seasoning, then pressure can according to directions.

    Did it 1 year. Turned out great! Iirc, all I did was cram meat in jar, add a little chunk of bacon, and drop it into the pressure cooker. It's super tender and really easy.

    It has taken me years to appreciate canned venison. We didn't have a freezer when I was a kid, so every deer Dad shot was canned. I got sick of eating it. I have frozen every deer I have ever shot!
    A cousin canned some last year and served for lunch during rifle season. It was good-but I'm glad I can have steaks, burgers,sausage etc. from the deer I shoot. I am thinking that canning a dozen pints might be a good thing to do this year, though, for a change of pace.

    A "Ball" canning book would have directions. Also, you can look it up online:
    Canning Meat, Venison, Beef, Pork, Elk, Chicken and Fish.
    As long as you have pressure canner, you should have no trouble.
