    We had an informal Thanksgiving today, hosted by us. Friends and some family that we wouldn't be able to see Thursday, we saw today.
    Enjoyed a Patriots victory, some bird and a few too many Sam Adams. I'm off this week so it's all good.

    I practice cooked a 12 pound bird on the kamado today. The package said it was in a 15% solution, which means a salt brine. I cut the back bone out of it, split the breast bone so it could lay flat on the grill. Gave it a spice rub and grilled at as close to 350f as I could get it. It was done surprisingly quick, an hour and a half! Next time I'll use a heat diffuser, which is just an old pizza stone above the coals. I haven't figured a way to suspend it above the firebox, but under the grill yet. I shredded it all up and weighed out 1/4 pound servings to keep in the freezer.

    Right where I want to be.
    We're going to relatives on Thursday, and everyone is bringing something.
    We planned this out on the last visit there this past summer.
    I'm going simple....pumpkin pies. Wife is making orange jello salad.

    Sounds like a plan, have to spend a year honing my skills though. I've only ever grilled on gas but I'm looking forward to getting into it with the charcoal and wood.

    First year no big family get together here. We are not up to it. Going to one ofhe kids home so no say on the meal. Should be ok. Wife cooked a turkey for us today. Wouldn't be thanksgiving without "left overs"

    Most important thing is, never cook "anything" on high heat, above 400*! No need to unless your searing a steak. You'll be fine and remember the first rule;
    That there isn't any rules! :cool: Have fun!:)
